Truffles Round 2

Next up Carrot Cake Truffles...








I made my carrot cake from scratch, but you can use a box mix as well. 


Once the cake is baked and cooled, you can hand crumble it in a bowl or you can use your food processor (which is what I did)


Add about 1/2 a container of frosting (I like the cream cheese frosting), melted.


Mix well.


Form into balls


Freeze them.


Then dip them in white chocolate, at this point you can sprinkle a little colored sugar to make them more "festive".  This particular picture was a trial run (I only dipped 5 of them), so I promise to post a finished product later.
