whoohooo! week one is over!

Well, we did it.  We worked out 6 days in a row with Jillian Michaels Ripped in 30.  Even in just a week we can feel the results of the workout combined with our already pretty healthy diet.  Tomorrow is our day off, then we start week 2, a new workout for another 6 days!

Below are pics from today...I've noticed I've been pretty boring in the food department this week.  But the foods I've been eating are ones I like and actually keep me feeling full. ;)

Day #5--Killed IT!

We are one day from finishing up week 1, meaning we are 1/4 of the way thru our current "project".
Jillian Michaels Ripped in 30, is an awesome workout...love that after workout feeling!



Breakfast:
Old fashioned oatmeal, with strawberry, banana and pecans
Veggies on a toasted whole wheat english muffin

Veggie "chik'n" wrap (whole wheat)
Exotic veggie "chips"
Greek Yogurt

Supper tonight was spaghetti squash with caramelized onions, garlic, and tomatoes





As much as I LOVE these flip yogurts, I was actually too full to eat it...guess it will be breakfast tomorrow :)

Day #4

Today was difficult, considering the oncoming cold--or maybe it's just allergies.  But we persevered and I'm proud to say we took our butt kicking from Jillian Michaels!

We have tomorrow and Friday left of the week #1, then Sunday we bump it up to week #2 for a whole new level of pain :)

Posting a day late, because by the end of the day allergies were kicking my tail...with the help of Benadryl, I was out for the night pretty early!

The latest...

So we (me and my exchange student Sara) finished the 6 week power sculpt workout program before Christmas.  And life after Christmas was INSANE...so here on the 26th of January we are jumping back on track!  

The new workout program is Jillian Michaels "Ripped in 30"...so do I expect to ACTUALLY get "ripped"...haha, no. However, I do expect to tone and tighten up some more, and maybe shed a little more 'flub' and replace it with some muscle.

Now, the plan is to "diary" our 30 days...this workout program comes with a meal plan.  That said, there wasn't much there for a vegetarian, so I decided to make my own, using her "calorie plan".  Instead of writing it all out, I've decided to photograph each meal and any snacks I eat...incase anyone is actually curious. ;)

So day one, I spend most of the day chopping, cooking, and preparing some things to make the week easier, should we get busy.  It is easy to eat healthy IF you fill the fridge with good foods.  

 Took this with a few other ingredients and turned it into... 
Veggie soup, Vegetarian Chili, and Lentil Stew.

Today I also prepped, veggies and "chick'n" for wraps and sandwiches and made a double batch of whole wheat blueberry muffins (I froze one batch for next week)

Android Cake

So, my Hungarian German exchange student is an BIG android guy.  So for fun, I decided to make a cake for him. (he has a strong dislike of Apple)

So I baked up my vegan chocolate cake (1 round, 2 square)

I used store frosting and used green and yellow food color paste to get as close to the color as I could.

The "apple" is sugar cookie dough, and unfortunately the leaf baked onto the apple, so the leaf is actually facing the WRONG way (but guess that covers the copyright issues..LOL) I melted white frosting and poured it over the sugar cookie and let it dry before placing in on the android dude.

Then I used a red decorator gel and red sprinkles for blood.

Pineapple Upside Down Cake

So I'm back! Christmas, New Years, and a trip to Florida, has kept me quite busy and away from the computer.

This is the first time I've made pineapple-upside down cake, vegan.  The last pineapple-upside down cake was for my Grandma several years ago for her birthday.  It's funny how many things you remember when your loved ones pass away.  I had forgotten that this was her favorite cake.

So I'm not posting the recipe tonight, my eyes and my allergies are tellling me that it's about time to call it a night.  But I promise to update this post sometime next week and add the recipe I used.

For now, I'll just post the pics :)
