Cornbread :)

So the tried and true vegan cornbread recipe.  One of my first successful "veganizations" from YEARS ago.

1 C. unbleached white flour
1/4 C. whole wheat flour
3/4 C. cornmeal (yellow or white)
1/4 C. sugar
2 t. baking powder
1/2 t. salt

1 C. plain soymilk or almond milk (not vanilla)
1/4 C. oil (coconut or canola)

Mix the dry ingredients, add the liquid ingredients and mix until combined (don't over mix).  Bake for 20 minutes at 400 degrees, in a cast iron skillet (greased).

Ready for the oven.

Perfect!


Served up with some vegan chili.


Or...served my favorite way, with some strawberry jam. :) YUMMMY
