Blueberry Wheat Muffins

So my lazy Sunday morning started with muffins :)

Wheat Blueberry Muffins
1 1/2 C. Whole Wheat Flour
3/4 C. Unbleached White Flour
1 C. Brown Sugar
3/4 t. Salt
1 t. Baking Powder
1/2 t. Baking Soda
1 t. Cinnamon
1 C. Frozen Wild Blueberries (they are smaller)

1 T. Vanilla Extract
1/3 C. Oil
1 1/2 C. Almond or Soy Milk

Cinnamon/Sugar for topping

Mix first 8 ingredients.  In a separate bowl, mix the vanilla, oil and milk; add to dry mixture and stir to just combine.  Spoon into lined muffin pans, filling until almost full.  Sprinkle each with a little cinnamon sugar, Bake @ 350 degrees for 18-20 minutes.

Fresh out of the oven (they end up looking a little "green" because of the blueberries)
