Potato Frittata

This morning I decided to make some "muffin sized" breakfast frittatas.  I will try to post a recipe later.  For now just a few pictures...

I would normal sprinkle some cheddar cheese on top and serve with some whole grain bread and fruit.  Maybe I'll catch a picture of it "served up" tomorrow ;)
